  1. We don’t have maple trees here in New Zealand, so I’m finding all this fascinating. Do you buy the tap and bucket contraption all together? How far does it go in?

  2. The little spout (it’s called a spile) goes in just 2 inches. Sap is flowing all through the “sapwood” just inside the outer bark of the tree. I drill a hole and gently tap the spile in. Then hang the bucket on the little hook. I did buy it all together at a maple syrup supply shop out in the country (actually, my aunt did). The sap only flows during the spring thaw and we stop collecting sap once the tree buds. Then boil it down to make syrup – yum!
